Chocolate chip coconut cream whoopie pies 😍
Flourless, sugar & grain free but flavor FULL
To make the cookies:
1 cup cashew butter
1 egg
1-2 tbsp non dairy mylk
½ tsp sea salt
½ tsp baking soda
½ cup of honey or 1/4 cup monk fruit
½ tsp vanilla
½ cup of dark chocolate chips

Preheat oven to 350. Mix all ingredients together in a bowl minus the choco chips. Mix until smooth, then fold in the chocolate chips. Spoon out the mixture on a parchment lined baking sheet about an inch apart each. Bake at 350 for 8 mins and then let sit out for at least an hour to cool. Once cool, spoon @coconutcollab_usa vanilla coconut yogurt between 2 cookies & you’re done!
Pssst make sure you “ice” these cookies right before you eat them otherwise they’ll get soggy OR after you ice them store them in the fridge and they won’t get soggy! 😘
