Peanut Butter Chocolate Keto Cereal Bars

Ummm guys @thymewithjess & I are slightly losing our minds over these. We got the idea for them when I came across this new keto cereal @catalinacrunch & just HAD to recreate my fav, shitty cereal bars I used to eat as a kid. Remember the delicious but gross ones that came in foil packaging and different cereal flavors like Honey Grahams?
Well these are similar but actually good for you! And filling!

1 scoop of @vitalproteins Gelatin
1/3 cup warm water
1/3 cup powdered @lakanto monk fruit
3 Tbsp @fourthandheart ghee
4 tbsp of peanut butter
2 cups of dark chocolate @catalinacrunch cereal

Whisk 1 scoop of gelatin with 1/3 cup of warm water. Set aside in a bowl and SLOWLY whisk in your powdered monk fruit. You have to pour this in very slowly, only pouring in small amounts at a time in order to really mix. Set aside and let it sit for about 5 mins to thicken. It will get pretty fluffy and gooey looking. Meanwhile melt 3 tbsp of ghee over the stove, careful not to burn. Mix your ghee and peanut butter with your gelatin “fluff” in a large mixing bowl, then pour the Catalina crunch cereal in, mixing thoroughly. Pour the cereal mixture into a 4x4 dish and put in the freezer for 5-10 mins to harden.
Cut and serve!!

I’ve been getting this question a lot lately. No I don’t follow a keto diet but I do watch my sugar intake so I find myself eating a lot of keto treats when I have treats cause they’re low in sugar and high in fat, so they’re super satisfying- and still delish!
