MOM’S/GMA’S CHEESECAKE
Preheat your oven to 375
Put into food processor:
1 package of Gluten Free Graham Crackers
1/2 cup of monk fruit
1 stick of butter (1/2 cup)
Press this mixture into the bottom of your pan
Mix together:
2 8oz of cream cheese softened
2 eggs
2/3 cup monk fruit
1 tsp vanilla
Pour the mixture over your graham crust. Bake 20 mins. Remove and let sit for 15 mins. Set the oven to 450.
Meanwhile combine:
12 oz sour cream (I used @good_culture pasture raised)
2 T monk fruit
1 tsp of vanilla
Evenly spread over the baked filling, bake 10 mins. Let it cool, then chill overnight (or at least 3 hours).
