Peanut Butter Chocolate Chip Collagen Bars

I was inspired to make more of these cause they’re the perfect snack to throw in my pocket while snowboarding
🍫🥜Peanut Butter Chocolate Chip Collagen Bars🥜🍫
Sugar free, high fat & protein packed. Let’s be real they’re basically healthy cookies!

1/2 cup organic pb
2 tbsp @lakanto monk fruit syrup (you can also use the granulated monk fruit)
2 scoops of @vitalproteins collagen
A few grinds of pink salt
1 tsp vanilla
2 tbsp coconut flour
2 tbsp coconut oil, melted
1/4 cup @lilys_sweets_chocolate chips

Mix all ingredients except for the oil, flour and chips in a bowl. Next throw in your flour and mix before adding in the melted coconut oil. Finally add in your chocolate chips and mix until evenly distributed in the batter. Your batter will be crumbly - that’s okay. Scoop out 1 tbsp worth at a time and form into a ball. The warmth of your hands and the pressure will make them stick together! Then shape as you please. I have been forming them into squares or bars but you can make any shape you want with them. Place on a tray or plate and pop in the freezer for 20-30 mins. Then they’re ready to be eaten/stored! For this batch I melted half a  @lilys_sweets_chocolate dark chocolate bar and drizzled on top after they came out of the freezer, but this is totally optional!
They’re best stored in the fridge until ready to be eaten. They stay together better when a little cold. Let me know if you make them! Enjoy!
